Kid Lipase
Lipase is added to cheeses to give an extra kick when wanted. Making Feta? Want the goaty taste but only have cows milk? You can use Lipase to create a more pungent flavor. Used for making Parmesan and can be used in Mozzarella also.
A pinch to 1/4 tsp per 4 to 6 litres of milk. 33gr pouch

For cheese making, lipase is used in many hard Italian cheeses it creates a sharp aroma and taste. Although not a necessity for most cheeses it is required for Parmesan and often used in Blue cheeses and Feta. Lipase is an enzyme and not suitable for texture and sharp taste common (and desired) in most Italian cheeses, as well as some Feta and Blue Cheeses. Will inoculate 48 or more litres of milk.
All products are good for 1 year when stored correctly. Store in Freezer!!
